Why is the pork shoulder called Boston Butt?

I really like Q. No, more than that...I married a girl from Birmingham AL in-part because I could get good Q when I visit the in-laws.

Anyhow, your Q looks very good.

I'll try your ten hour, brine+all-grill, technique the next time my cardiologist gives me clearance to smoke a pork shoulder. I like your addition of Ancho and Chipotle to the rub.

Cook's Illustrated had an article on BBQ pork shoulder. They suggested 2-3 hours on the grill, in a disposable aluminum pan, then finishing in a 225 degree oven for 2-3 hours with the aluminum smoking pan covered tightly with foil. Then, when they pull it from the oven to rest, they put it in two brown paper sacks, leave the foil in place. This is apparently to let the pork juices go back into the muscle fiber.

I tried the Cooks Illustrated technique on vacation with my wife's family (from Birmingham AL) and they were astonished that a yankee could make Q so good.

Why the name Boston Butt? I heard butt because it's the butt end of the shoulder, but why boston?
